Fine-dining on the Seas

Seven Seas Explorer, the all-new cruise ship from Regent Seven Sea Cruises, will include an all-new specialty restaurant concept onboard, along with the brand’s signature steakhouse, Prime 7.

Called Chartreuse, the new eatery specialises in gourmet French fare and will be the first in the new series of specialty restaurants for the line. Evoking the ambience of a chic Parisienne fine-dining restaurant, Chartreuse is decked out with glass-panelled walls, elegant booths, earthy colours and warm lighting. Guests can dine indoors or in the Parisian-inspired courtyard.

Chartreuse will offer a menu of dishes that showcase classic and modern French gastronomic techniques, including hand-cut Charolais steak tartare in a hazelnut-Dijon emulsion topped with Perlita caviar d’Aquitaine; roasted Cevennes rack of lamb with rosemary-mint persillade and sugar snap pea sauce; and poached Brittany blue lobster tail glazed with caramelised lobster roe butter on a bed of Sologne white asparagus and Romanesco.
