Capella Sydney has launched of its first Chef in Residence series at Aperture, featuring the renowned Federico Zanellato of Lode Pies.
For an eight-week residency starting June 13, 2024, Federico will collaborate with Capella Sydney executive chef Gabriele Taddeucci, to bring the Lode experience to life in the hotel’s all-day dining venue, Aperture.
This exclusive dining experience will be available Monday to Friday from 5.00 pm – 7.00 pm, and is designed to cater to guests and corporate after-work clientele. Guests will have the opportunity to enjoy the Lode Pie experience while sitting beneath the mesmerising bespoke kinetic sculpture Meadow by Amsterdam-based art duo DRIFT, amidst the stunning surrounds of Capella Sydney.
The Capella Sydney x Lode Pies menu will include a Blackmore wagyu pie with mushroom and chianti red wine jus; and a truffle and comté pie with potato dauphinoise, crispy onion, and fondue. Each pie will be served with a side of creamy spinach and winter salad leaves, and perfectly paired with a glass of Young Henry’s Sandstone Lager, or a choice of house sparkling, red, or white wine.

Federico, owner of the two-hatted LuMi Dining and the artisan pastry shop Lode, is one of the most recognisable faces in the Sydney dining scene. Over the past two decades, Federico has forged a close friendship with chef Taddeucci through their shared Italian heritage.
Lode Pies has gained legions of fans in Sydney since its inception in 2021. Known for its edible masterpieces that look like works of art, Lode Pies has established a reputation for innovation and excellence in pastry. Federico Zanellato’s culinary journey began in top European restaurants, including La Pergola alongside Heinz Beck and The Ritz, London.
After developing a passion for Japanese food culture during his time in Japan, Federico brought his vision to Australia, securing two Chef Hats at Ormeggio at the Spit during his tenure as head chef.
