The seductive new venue joins Belmond’s impressive collection of illustrious bars from around the world, from Hotel Cipriani’s Bar Gabbiano in Venice to Copacabana Palace’s Piano Bar in Rio de Janeiro.

The intimate cocktail lounge will feature innovative cocktails, authentic Peruvian cuisine and incomparable views of one of the world’s most iconic cities, recognized by UNESCO as a World Heritage Site. Opening on March 3 2023, the hotel’s new rooftop debuts in exclusive collaboration with Handshake, a legendary Mexican speakeasy bar recently recognized as one of “The World’s 50 Best Bars” in 2022, bringing elevated and creative mixology to the scene.

Named after the official bird of Peru, Tunki Rooftop is a celebration of the union of two vibrant cultures, drawing inspiration from Coast, Jungle and Highland regions, each with distinct personalities and flavors. Widely acclaimed for their speakeasy cocktail bar in Mexico City, Handshake’s menu is a tribute to the community of Mexican bars from the resistance era. The famed speakeasy caters to a new generation of cocktail lovers seeking innovation combined with an intimate and extraordinary atmosphere.

Their bars have their own unique spin on ‘crowd favorite’ cocktails, from adding brown butter mushroom to an Old Fashioned to incorporating mole and sesame into a Michter’s Manhattan. Elevated ingredients, high doses of creativity, and careful attention to detail are the hallmarks that have made Handshake one of the most celebrated names in Mexico’s mixology scene, which Casa de Sierra Nevada’s guests will now be able to experience firsthand at Tunki Rooftop.

New Gastronomic Discoveries

Tunki Rooftop by Handshake will take guests on a gastronomic adventure, offering creative mixology complemented by a menu inspired by the three magical regions of Peru: Coast, Jungle and Highlands, each with its own distinct flavors and ingredients. Expertly crafted cocktails will delight the senses and pair perfectly with the vibrant flavors of Peru.

Highlights include the rooftop’s signature Tunki Spritz, with Aperol, coconut, prosecco and soda; and Cariño, a fresh, creamy aperitif featuring Bacardi 8 Rum, Yellow Chartreuse, vanilla, lemon and Greek yogurt. Guests can also choose from a selection of herbal concoctions; the bittersweet, long Fig Americano consists of Di Battista Bitter, Cinzano Rosso, fig leaf and soda; while the Flowerbomb, offers patrons a crisp, short alternative with Ocho Blanco Tequila, Saint Germain, orange blossom and tonic.

The locally-sourced menu will showcase small tapas dishes designed for sharing, from Carretillero Ceviche and Trout Tiradito in Aji Amarillo Sauce to Chaufa Charapa with Glazed Pork Ribs and Panchamanca Chicken. Guests can conclude their dining experience with a sweet finale, choosing from indulgent desserts such as Ponderación with Lucuma Ice Cream, Suspiro with hints of Pisco, and Mazamorra Brulee.

An Enchanting Atmosphere

Upon arrival, guests are greeted by breathtaking vistas of one of the world’s most magical cities, which inspired the color palette used throughout the rooftop lounge’s design; from the pink limestone façade of the Parroquia de San Miguel Arcángel and the golden light at sunset to the rusty tone of the terracotta roof tiles.

Each piece of furniture has been sourced by local artisans in San Miguel de Allende and Guadalajara, providing a truly authentic Mexican experience. The dark-stained bar, featuring local carved timber with rich, blackened details, makes an instant impression with a beautiful backsplash of hand-painted tiles in bespoke colors, brown marbled Rojo Azteco stone countertops, glass and iron pendants, and camel-hued saddle leather bar stools.
